I want to explore other cuisines and soups are a favorite now since the weather is a bit cold still.

Stews would be good too, so any suggestions are welcome!

Are we talking creamy, thick soups or are you good with ramen and the like? If exploring, ramen would be good because recipes are a bit more flexible- you can choose which base you want, what proteins and veggies to put, and so on. Not sure where you are from so I'll start with the more basic taste profiles.

Try to search for recipes on these two to get you started:

Tonkotsu Ramen- its a pork ramen with pork loin slices, and soft boiled eggs. barely any spice

Shoyu Ramen- Shoyu basically means soy sauce so this has a dark-colored broth - you can actually just buy broth base for this.

Miso Ramen- Miso is fermented soybeans, and this is a rich and tasty broth - I believe umami is a good word to describe the taste.

 

You can use either chicken, pork, or cured meats like ham and even bacon for this, or beef even. Then just soft boil an egg, add some vegetables. Mushrooms are very good for these. Making your own is waaay different than instant ramen. Definitely great for cold weather and since you have noodles, its filling too.
